Vickie made my daughter a Peppa Pig themed 3rd birthday cake and it was totally amazing! My daughter was delighted with it! The attention to detail was impeccable and it was a real piece of cake art! My name is Victoria or Vickie for short, and I live in Rainhill, Merseyside, and have done all my life. I like to think of myself as a friendly, outgoing, well organised person. I started baking as a child helping my Gran and Nan bake delicious cakes, scones, pies, and potato cakes!
During college I attended an evening course in Royal Icing cake decorating. My first job was at a bakers and confectioners in the area, icing and decorating fresh cream cakes, donuts and fondant fancies! Unfortunately I only had one shift a week, and left to take up a job that offered more hours, and this is where my cake decorating was put on hold for a few years. Although I was not working within a baking profession, I still enjoyed baking as a hobby for friends and family.
I completed a Diploma in Diet and Nutrition and got myself a position working at a Dietetic department in the NHS. Within this post I've completed a Foundation Degree to become an Assistant Practitioner, and my current job involves me encouraging patients to increase their energy intake to help promote weight gain. One way to do this is 'by eating more cake!'
I attended an evening class in sugar paste skills for cake decorating. I absolutely loved it! I routed out my cake decorating equipment from my college course and off I went. I started making cakes for family and friends birthdays and special occasions, and received really lovely compliments about them. This sparked a light bulb moment could I run my own business, selling cakes for a living? So I thought why not give it a go.
This takes us to present day, and the creation of Victoria Sponges Rainhill Limited. I hope my cakes bring a smile to people's faces as much as it brings a smile to mine making them!
Additional courses taken in Cake Decoration, Sugarpaste Skills, Wedding Cakes and importantly a Level 2 – Food Safety and Hygiene for Catering. Attendance at important industry events such as Cake International and membership of the British Sugar Craft Guild.
Working and training for the last 15 years in a variety of organisations. Training in a catering environment, working within a large bakery/confectioners and training and working in a local branch of a national diet and nutrition operation.
